Cream

Cream, in the cocktail world, usually means heavy cream or whipping cream. It’s the fatty part of milk that separates and floats to the top, then gets pasteurized and sometimes homogenized. The fat content is key here, usually between 36% and 40% for heavy cream. That’s what gives it that rich mouthfeel and silky texture. Taste wise, it’s mild, slightly sweet, and incredibly smooth. It’s not meant to be the star flavor, but rather a luxurious base or a softening agent for stronger spirits. Think of it as the velvet glove for a boozy fist. What it’s not is half-and-half, which is too thin, or any of those sweetened coffee creamers. Those have added sugars and stabilizers that will throw off your drink’s balance and texture. Stick to the real dairy for proper results.

When you’re out of cream or avoiding dairy, you’ve still got options for that creamy texture.

• Coconut Cream: thicker than coconut milk, gives a tropical vibe. Great for a Piña Colada spin.
• Oat Milk Barista Blend: designed for frothing, so it has a good creamy mouthfeel without being too thin. Neutral enough not to overpower.
• Cashew Cream: if you’re feeling ambitious, blend soaked cashews with water until smooth. Very neutral and rich.
• Irish Cream Liqueur: already sweetened and boozy, so adjust your recipe. Good for a quick fix if the flavor profile fits.

Most good quality heavy cream from your local dairy section will do the trick, but here are a few brands I’ve worked with that are consistently reliable.

• Organic Valley Heavy Whipping Cream: reliable, consistent fat content, widely available.
• Straus Family Creamery Organic Heavy Whipping Cream: often a bit richer, great for a really luxurious mouthfeel.
• Tillamook Heavy Whipping Cream: another solid, widely available choice with good body.
• Trader Joe’s Heavy Whipping Cream: surprisingly good value and performs well in cocktails.

Getting cream right in a drink isn’t rocket science, but a few simple things make all the difference.

• Always use fresh, cold cream. Warm cream separates and won’t emulsify properly.
• Shake cream hard with ice, but briefly. Over-shaking whips it, which is great for a topping, not so much for a smooth drink.
• Combine cream last in a shaker. If you put it in first, it can stick to the ice and not fully integrate.
• For a really silky texture without too much aeration, dry shake the cream with your other non-alcoholic ingredients first, then add ice for a short wet shake.
• If you’re batching a creamy drink, add the cream right before serving or shaking. It doesn’t hold up well pre-mixed for long periods.
