Espresso quality: always use freshly-pulled espresso. Instant coffee tastes like it looks. Let the espresso cool briefly before shaking (hot espresso melts the ice too fast).

Coffee liqueur: Kahlua is standard. Mr Black is premium. Tia Maria is lighter.

The foam: the crema on an Espresso Martini comes from shaking VERY hard with ice. If your foam is thin, shake harder for 15 seconds.
