Chambord

Chambord

Black raspberries, French XO cognac, and a bottle that looks like a Faberge egg. Chambord is the raspberry liqueur that made the French Martini what it is. Sweet, lush, slightly silly, occasionally exactly the right thing.

Black raspberry, blackberry, light vanilla, cassis-style fruit depth, gentle floral, long sweet finish. The XO cognac base gives it more complexity than typical fruit liqueurs.

How to drink it

French Martini (vodka, pineapple, Chambord), Kir Royale, Chambord Spritz, Raspberry Collins. Anywhere you want raspberry sweetness and a touch of luxury.

Decent neat over ice. The brand encourages this with a strip of lemon peel.

The chateau bottle and the legend

The Chambord recipe is loosely based on a raspberry liqueur made in the Loire Valley in the late 1600s for King Louis XIV. The modern bottling launched in the 1980s, shaped like a globe with a metal crown, looking exactly as ostentatious as the marketing suggests.

Brown-Forman bought the brand in 2006. Production has stayed in the Loire.

How the French Martini revived Chambord

The French Martini (vodka, pineapple juice, Chambord) was invented in New York in the late 80s. It was the right drink at the right time: sweet, fruity, theatrical, perfect for the cocktail bars of the era. Chambord rode the wave; the drink is still on most bar menus.

Substitutions and swaps

Chambord is the premium black raspberry liqueur.

Recipe says raspberry liqueur?

Chambord is the safe call. Drink will be lush and slightly cognac-tinged.

Recipe says creme de cassis?

Don’t sub Chambord. They are different berries. Cassis is drier blackcurrant; Chambord is sweeter raspberry.

Out of Chambord?

Giffard Framboise is the closest substitute. Plain raspberry syrup plus a teaspoon of brandy is a desperate sub.

Want it less sweet?

Reduce Chambord by 5ml in the recipe and add a teaspoon of fresh lemon juice.

Recipe says Cassis?

Crème de Cassis (the Crème de Cassis page) is the right bottle, not Chambord.

Skip if

You want unsweetened raspberry. Use fresh raspberries plus simple syrup.

You want cassis flavour. Chambord is raspberry, not blackcurrant.

You want bargain pricing. DeKuyper or other supermarket raspberry liqueurs do the job for cheap, though the cocktail won’t sing the same.

Where to buy Chambord

Where to buy

Chambord is at most bottle shops, often near the cordials. The bottle stands out on the shelf.
