What it tastes like
Sweet cream, light Irish whiskey, vanilla, soft cocoa, a faint nutty finish. Heavy mouthfeel, dessert-like, almost milkshake at room temperature.
Drinks at 17% ABV. The cream and sugar mean it goes down very easy and catches up later.
How to drink it
Baileys and coffee, B-52 (Kahlua, Baileys, Grand Marnier layered), Mudslide (vodka, Kahlua, Baileys), Baileys over ice.
Skip it in citrus cocktails: the cream curdles. Skip it past the use-by date: cream liqueurs do go off.

How Baileys invented the category
Baileys launched in 1974, the first commercially successful cream liqueur. The recipe combines Irish whiskey with fresh Irish dairy cream stabilised by a proprietary process. The brand essentially created the Irish cream category that everyone else copied.
Diageo owns it now and produces it at facilities in Dublin and Belfast. The dairy alone is something like a hundred million litres of cream a year.
Why Baileys still matters
Cream liqueurs went out of fashion among bartenders for years. Baileys quietly survived because it does one thing well (Irish coffee, Mudslide, B-52, after-dinner sipper) and remains genuinely well-made. Recently it has come back into fashion via dessert cocktails.
Best cocktails to make with Baileys Irish Cream
Baileys does Irish coffees, Mudslides, B-52s, and any cream-and-coffee cocktail.

Substitutions and swaps
Baileys is the Irish cream default.
Baileys is the safe call. Carolans is a similar-quality alternative.
Add real heavy cream alongside Baileys for a Mudslide or White Russian variation.
Carolans, Saint Brendan’s, or any halfway-decent Irish cream subs at 1:1.
Baileys plus Kahlua makes a B-52 base or sweeter White Russian.
Generic creme liqueurs (creme de menthe, creme de cacao, etc) are not interchangeable with Baileys. Different products.
You’re making a citrus cocktail. The cream curdles.
You want sophisticated bartender approval. Cream liqueur is unfashionable in some circles.
Your bottle is past its date. Cream goes off. Don’t risk it.

Frequently Asked Questions
Direct answers to what people ask about this bottle.
What is Baileys Irish Cream?
Baileys is an Irish cream liqueur made by Diageo at facilities in Dublin and Belfast since 1974. It blends Irish whiskey, fresh Irish dairy cream, sugar, vanilla, and cocoa, bottled at 17% ABV.
Is Baileys good?
For what it does, yes. It is the textbook Irish cream and a fixture in any cream-based cocktail. Not a bartender-credibility bottle but genuinely well-made.
What does Baileys taste like?
Sweet cream, light Irish whiskey, vanilla, soft cocoa, faint nutty finish. Sweeter than typical drinks at this ABV; heavy mouthfeel.
Does Baileys go off?
Yes. Baileys has a roughly two-year shelf life. Once opened, refrigerate and use within six months for best quality.
Is Baileys gluten-free?
Diageo states Baileys is gluten-free. The Irish whiskey base is distilled to neutrality which removes gluten. Check the label if you have severe sensitivities.
Can you drink Baileys neat?
Yes, over ice. The brand’s most popular serve is exactly this. A small pour after dinner is the canonical use case.
Baileys vs other Irish creams?
Carolans is similar quality and similar price. Saint Brendan’s is sweeter. Generic supermarket Irish creams are thinner and lower quality.
What is the best cocktail to make with Baileys?
An Irish coffee with Baileys: 30ml Baileys, hot coffee, top with whipped cream. Or a Mudslide: 30ml vodka, 30ml Kahlua, 30ml Baileys, blend with ice or shake hard.
