What it tastes like

Sweet cream, light Irish whiskey, vanilla, soft cocoa, a faint nutty finish. Heavy mouthfeel, dessert-like, almost milkshake at room temperature.

Drinks at 17% ABV. The cream and sugar mean it goes down very easy and catches up later.

How Baileys invented the category

Baileys launched in 1974, the first commercially successful cream liqueur. The recipe combines Irish whiskey with fresh Irish dairy cream stabilised by a proprietary process. The brand essentially created the Irish cream category that everyone else copied.

Diageo owns it now and produces it at facilities in Dublin and Belfast. The dairy alone is something like a hundred million litres of cream a year.

Why Baileys still matters

Cream liqueurs went out of fashion among bartenders for years. Baileys quietly survived because it does one thing well (Irish coffee, Mudslide, B-52, after-dinner sipper) and remains genuinely well-made. Recently it has come back into fashion via dessert cocktails.
