Ingredients
- 10 2 oz plastic soufflé cups
- 3 oz Blue Jell-O
- 1/2 cup boiling water
- 1/2 cup Blue Curacao Liqueur
- 1/2 cup Coconut Rum
- 1/2 cup Pineapple Juice chilled
- 10 fresh pineapple wedges for garnish
- 10 maraschino cherries without stems, drained
Instructions
Prepare Cups:
- Place the plastic soufflé cups on a baking sheet or tray.
Mix Jell-O:
- Add the powdered Jell-O to a large mixing bowl.
- Pour the boiling water into the bowl and whisk until the gelatin is fully dissolved.
Add Alcohol and Juice:
- Add the Blue Curaçao, Malibu Rum, and chilled pineapple juice to the gelatin mixture. Stir to combine.
Pour and Chill:
- Pour the gelatin mixture into the cups.
- Place the baking sheet or tray of jello shots into the refrigerator and chill for at least 4 hours or overnight.
Garnish:
- Before serving, cut fresh pineapple into bite-sized wedges and cut a slit into each wedge.
- Place a pineapple wedge onto the rim of each jello shot cup.
- Place a maraschino cherry on top of the blue gelatin, in the middle.
- Enjoy responsibly!
Notes
For an extra festive touch, you can also add edible glitter or sprinkles before the gelatin sets. Make sure to use chilled pineapple juice to help the gelatin set properly.
