Turn the classic tropical Pina Colada cocktail into fun and easy-to-serve jello shots! With pineapple juice, coconut cream, and rum, these jello shots bring the beach vibes to any party. Topped with a cherry, they’re a sweet and tropical treat your guests will love!

Ingredients

  • 1 tablespoon unflavored gelatin or 1 envelope gelatin powder
  • ¼ cup cold water
  • 2 tablespoons Sugar
  • ½ cup Boiling Water
  • ¼ cup Pineapple Juice
  • 2 tablespoons cream of coconut Coco Real recommended
  • ½ cup Silver Rum or coconut rum
  • 12 maraschino cherries rinsed and dried
  • 12 2-ounce plastic cups with lids

Instructions

Prepare the Cups:

  • Place the plastic shot cups on a small baking sheet for easy transport. Set aside.

Bloom the Gelatin:

  • In a small mixing bowl, sprinkle the gelatin powder over ¼ cup cold water. Let it sit for about 2 minutes to absorb the water.

Dissolve the Sugar and Gelatin:

  • Add the sugar to ½ cup boiling water and whisk until dissolved. Pour the hot water into the gelatin mixture and whisk until the gelatin is fully dissolved.

Add the Flavorings:

  • Whisk in the pineapple juice, cream of coconut, and rum until well combined.

Pour and Chill:

  • Pour the jello mixture into the prepared plastic cups, filling each one about ¾ full. Place the cups in the refrigerator uncovered for 30 to 40 minutes until the jello begins to thicken.

Add the Cherries:

  • Remove the jello cups from the fridge and gently press one maraschino cherry into the center of each cup, allowing it to partially submerge.

Refrigerate Until Set:

  • Return the cups to the fridge and chill for 2-3 hours, or until the jello is completely set.

Serve and Enjoy:

  • Cover each cup with a lid and refrigerate until ready to serve. Serve chilled for a sweet, tropical experience!
