Where it came from
Pina Colada cousins multiplied in the 1980s when blender drinks were everywhere. Adding Baileys and banana to the standard build came from beach bar menus that wanted to push the dessert angle further.
It is a blended drink, not a built one. Without the blender it cannot be done because the fresh banana needs to be broken down.
What it tastes like
Sweet ripe banana up front, vanilla cream from the Baileys, coconut and pineapple on the back from the pina colada mix, a faint dark rum molasses note. It drinks like a smoothie that decided to misbehave.
Plenty of ice in the blender keeps the texture. Not enough ice and the drink goes runny.

Ingredient Spotlight
The bottles that make or break this drink.
The fresh banana
- Use
- One ripe banana per cocktail. Brown spots on the skin
- Why
- Underripe banana is starchy, the drink goes flat
The Baileys
- Use
- Baileys Original or Baileys Salted Caramel
- Why
- The Irish cream binds the banana and rum
The dark rum
- Use
- Goslings Black Seal or Myers Dark
- Why
- The molasses note is what stops it being just a milkshake
What if I don't have…
Quick substitutions for when the bottle shop is closed.
Use 30 ml banana liqueur extra. Drink loses body but works.
Coconut cream plus pineapple juice in equal parts.
Spiced rum or aged rum. White rum makes it too light.
Add 15 ml of vodka. Tropical hammer.
Half the cream with milk.
