Set Up the Cups:
- Place your plastic shot cups in a single layer on a baking sheet for easy transport.
Prepare the Gelatin:
- In a medium mixing bowl, pour in the unflavored gelatin powder. Add ¼ cup cold water and stir to combine. Let the mixture sit for 3 to 5 minutes until the gelatin absorbs the water.
Dissolve the Gelatin:
- In a small saucepan, bring ½ cup hot water to a simmer. Pour the hot water into the bowl with the gelatin and whisk until the gelatin fully dissolves.
Add the Sugar:
- Whisk in ¼ cup granulated sugar until it melts into the mixture.
Mix in the Vodka and Soda:
- Pour in 1 cup peach vodka and ½ cup lemon-lime soda (or champagne). Stir until everything is well combined.
Pour into Cups:
- Carefully pour the jello mixture into the prepared plastic cups, filling them almost to the top.
Chill:
- Place the jello shots in the fridge for 1 to 2 hours or until fully set.
Garnish and Serve:
- Once the jello is set, cover each cup with a lid and chill until ready to serve. For a fancy touch, top each jello shot with a thin slice of fresh peach before serving.
Notes
For an extra fruity twist, finely dice the peach and add about ½ teaspoon of diced peach to each cup before pouring the jello mixture. It adds a nice texture and extra peach flavor to your shots. You can also swap the soda for champagne for a little extra sparkle!
