Liquid Ecstasy is a bright, fruity highball of lemon rum, melon liqueur and blue curaçao, lengthened with lemon juice and a good pour of apple juice. It tastes like a sweet, tangy fruit punch with a lemon edge, and it is light on alcohol for how colourful it looks. It is served over ice in a tall glass, or shaken and strained into a martini glass.
Ingredients
- 30 mL Lemon Rum lemon-flavoured rum
- 15 mL Melon Liqueur
- 15 mL Blue Curacao Liqueur
- 15 mL Lemon Juice fresh
- 90 mL Apple Juice chilled, clear
Instructions
- Fill a highball glass with ice.
- Pour in the lemon rum, melon liqueur, blue curacao liqueur and lemon juice.
- Top with the apple juice and stir briefly.
- Garnish with a slice of lemon and serve straight away.
- To serve it as a martini glass drink instead, shake all the ingredients with ice, strain into a chilled martini glass and rest the lemon slice on the rim.

Apple juice makes up most of the glass, so the drink reads as a fruit cooler first and a cocktail second. The melon liqueur adds a candy-like sweetness, the blue curaçao brings a light orange note and the blue colour, and the lemon rum and lemon juice keep it from going syrupy.
It is an easy drink for people who like sweet, fruity cocktails and do not want to taste much spirit. Anyone who prefers dry or bitter drinks will find it too sweet.
Making the colours and flavours behave
Build it over plenty of ice in the order of the recipe, with the juice last, and give it a quick stir so the liqueurs do not sit at the bottom. Fresh lemon juice makes a clear difference, because bottled juice flattens against the sweet melon liqueur.
If you shake it for a martini glass, shake with ice until the shaker is cold and strain well so no ice chips float on top. Chilled apple juice keeps the drink cold without watering it down. A clear apple juice gives the cleanest colour, since cloudy juice muddies the bright blue and green.
Swaps and tweaks
Other versions of this drink use pineapple juice in place of apple, which gives a more tropical, tangier result. Plain white rum with an extra squeeze of lemon stands in for lemon rum, and a watermelon liqueur is a fair swap for the melon one.
For a tarter drink, add a little more lemon juice and a little less apple. For an alcohol-free version, use lemonade or a splash of lemon juice with apple juice and a few drops of blue food colouring.

What can I use if I do not have lemon rum?
Use white rum and add a small extra squeeze of lemon juice, or a lemon-flavoured vodka if that is what you have. The taste will be a touch less lemony but the drink still works.
Should Liquid Ecstasy be shaken or built in the glass?
Both work. Building it over ice in a highball is quicker and gives a longer, more casual drink. Shaking and straining into a martini glass makes it colder and a little more diluted, so it looks neater.
Can I use pineapple juice instead of apple juice?
Yes, and several other recipes for this drink do exactly that. Pineapple makes it tangier and more tropical, while apple juice, as in this version, keeps it softer and slightly sweeter.
