Where it came from

The Nut Buster is part of the early-2000s coconut-rum-and-cola family that owes its existence to Malibu marketing. Same family as the Bahama Mama, the Coco Loco and the Pina Colada lite. The vanilla cola is the modern shift, swapping in for plain cola to lift the tropical edge.

It became a fixture on Caribbean cruise menus and Florida poolside bars where the bartender needed a fast pour with low overhead. Two bottles, two pours, one glass.

It is a daytime drink. Pool decks, BBQs, anywhere with a sun lounger and an umbrella. Not a closing-time drink and not a cold-night drink.

What it tastes like

Coconut up front, vanilla cola through the middle, a long sweet finish. The cola provides the carbonation and the colour, the rum adds the perfume. Reads sweeter than its ABV suggests.

About 6 percent ABV in a tall glass. One and a half ounces of rum stretched with eight ounces of vanilla cola. Drinks like a soda with a kick.

The technique

Build directly in a tall glass over plenty of cracked ice. Pour the coconut rum first, then top with the vanilla cola. Stir once with a long spoon, just enough to mix without flattening the carbonation.

Use cold cola straight from the fridge. Warm cola and ice equals flat soda within a minute, and a flat Nut Buster is a sad drink.
