In a cocktail shaker, add the mint leaves, lime juice, and simple syrup. Muddle well to release the essence of the herbs.
Add gin and fill the shaker with ice.
Shake well and Strain into a highball glass filled with fresh ice. Double straining is recommended if you don't want any hint of small particles or torn herbs in your beverage.
Top with ginger beer.
Garnish with a sprig of mint.
